FAVE Flour Alternative!!!
My Favorite alternative flour ( to all-purpose wheat flour) hands down! I've tried handfuls of flour options in my life. This has gluten, but is (supposedly) easier for our bodies to digest. When I've tried other flours I consistently have come back to this one, so (for years now) this is my go to flour of choice! Because... 1) The taste is most similar (compared to "regular" A.P. flour) & it has a slightly sweet taste to it, 2) measuring conversions is most similar to AP flour (for like using a random recipe off the internet. It is not exactly 1:1, but its closest (vs other flours)). White spelt takes a bit more flour (than regular flour... like recipe calls for 1 cup AP, depending what the recipe is for you may need 1.25 cup spelt flour. While many other flours would need a lot more tweaking (wet to dry ingredient ratios)). Love this stuff! So grateful my mom knew of or found it to try so many years ago. I'm not allergic to wheat, I've got a "sensitivity" - so I realize this may not work for everyone out there needing to avoid wheat. But if you're not truly allergic to wheat but want to avoid it, this is a Great option!

Fantastic 1:1 replacement for normal wheat
***F.Y.I. SPELT IS NOT GLUTEN FREE - it is an ancient form of wheat and is still part of the genus Triticum. It just has a different ratio of the gluten components than modern wheat does. I say this first so it stands out, because I have seen so many spelt reviews talking about it being suitable for those with Coeliac disease or gluten intolerance. IT IS NOT. If you're after a decent GF flour that doesn't break the bank, I make my own using this blend, and add xanthan gum as needed :) It comes out at about $2.20/lb, rather than $6/lb for King Arthur GF flour at the supermarket/online.- 350 g potato starch- 300 g white rice flour- 200 g brown rice flour- 200 g sorghum flourSome of those with fructose malabsorption can tolerate spelt (as I can) because it has less fructans (a type of fibre) than modern wheat but this is a completely different compound than gluten, which is a protein.***NOW, TO THE SPELT FLOUR.I love it. It makes baking reliable once more (although after 6 years of GF baking I've got the knack for it). I use this as a thickener in sauces, for baking cakes and breads, for pancakes and crepes - anything you might use normal wheat flour for, you can use this.While I still bake gluten free as I don't want to overload on the fructans I mentioned above, I will make a loaf of spelt bread (use Alton Brown's simple bread recipe from Good Eats) and it turns out beautifully - you just might need to tinker with the water/flour ratio but you can do that when you're kneading the dough.I highly recommend it.

Good in English muffins (low-gluten)
I bought this product to use in making low-gluten bread and related items. I have not yet made English muffins from spelt flour in this shipment; but I have done so in the past, with the same brand of spelt flour, and the English muffins turned out practically indistinguishable from ones made with all-purpose (regular wheat-based) flour. I try to eat an inflammatory diet, due to arthritis, and the spelt flour makes a real difference. The spelt flour is also useful in making low-gluten white, fluffy bread in the bread machine. I have also used spelt flour to make homemade birthday cakes, rather than use a traditional (higher-gluten) cake mix. I would recommend using spelt flour to anyone (except those with celiac disease, who must avoid gluten entirely) who likes traditional, white-bread-flour-based food items. The only exception is pierogi dough, which tears too easily when made with spelt flour.

Packaging: Take the time and a few cents to package in a plastic bag please.
I was glad to find the packages mostly intact. One of the two 5lb bags was starting to leak flour and a small amount was inside the cardboard box. If they had been inside a plastic bag and had been packaged in a manner so they were not getting jostled around so much they wouldn't have started to leak. The packages appear to be wrinkled and creased like they had been tossed around quite a few times. If I had seen a package like that on a shelf in a store, I would avoid it. I'm not surprised another reviewer complained of the package failing leaving flour all inside the box. If your wanting to avoid using plastic, at least use a couple of strong paper bags to put your 5lb. bags into or enough packaging so things do not get beat up during transport.

A great tasting option to conventional flour
I decided to try spelt flour after reading some disturbing information regarding the unimpressive nutritional value of "dwarf wheat," a.k.a. regular ol' wheat flour. Thus far I have been very impressed, and VitaSpelt has completely replaced conventional flour in my kitchen.So far I've adapted recipes for chocolate chip cookies and several types of yeast bread. You will find that the gluten in spelt (as mentioned on the label) is more delicate so it's important not to overwork yeasted doughs. In general, I've found that you want to increase the ratio of flour to moisture for good consistency. For example, in adapting the standard Toll House cookie recipe, I add another egg and 50% more flour and get delicious, chewy cookies.Spelt also seems to cook more quickly and burn a bit more easily. To give a good idea to anyone who isn't terribly comfortable monkeying with recipes, I made the following changes to the Toll House cookie recipe.50% more flour1 extra egg (50% more)bake 8 minutes exactly at 350 instead of 9-11 minutes at 375I hope this helps!

It is usable in a variety of ways... pancakes, biscuits, gravies, cakes, pies, brownies. It can be used in as many ways as regular wheat flour, yet without the gluten.

My Favorite Flour for Baking
I have been using this product since 1999. I am grateful that I can purchase it here. This weekend I am making a date-nut cake in my instant pot. Yum!

Seller only sent one 5Lb bag of flour.
This is not actually a 6 pack. In the process of getting a refund the vendors (BUYESQUARE) said there was a typo- that it was supposed to be almost $70 for a SINGLE bag of flour. I am glad they refunded the money as though it was actually a 6 pack and I was able to keep my flour. The flour is good. I ordered in March and expiry date is for Nov which is rather short though.Have tried to now purchase this through multiple vendors (THE BEST CA, Dotcom LLC, ⭐MALL OF CANADA⭐) who have only sent a single 5lb bag instead of the advertised pack of 6. All of them ended up refunding but I just want to get what is advertised. The flour is great, but all of these vendors sent flour with an expiry date within 6 months.
