Great beans!
Clean, whole, fresh, high quality, long expiration date, uniform size, easy to cook, delicious, nutritious and a great value.I am a huge fan of Mayocoba beans. I rinse then soak a cup overnight in a quart mason jar filled with water. I cook at high pressure in two cups of water for 12 minutes (tender but still fully intact) to 15 minutes (for very soft to mash) in my instant pot and they natural release in about 20 minutes. A dry cup makes four good size servings. I sometimes double the recipe (use some additional water for cooking) and freeze half for convenience. I love them with high fiber pasta dishes. I also like to mash them up a bit, season them and spread them on well toasted Ezekiel bread topped with a splash of Greek olive oil and balsamic vinegar. They are a great side dish, I warm them then season based on what I'm serving them with and add a drizzle of Greek olive oil. They are also great mixed with farro or barley as a highly nutritious beans and rice option. They are really delicious. I eat a mostly bean and legume based diet, so these are a staple for me and I always have them cooked and ready in my fridge and freezer.

I really liked them. Although they are rewashed, I rinsed them again. They cooked quickly and perfectly. And they were clean of de ris which is what I liked.
