Good flour for gluten free and paleo cooks....better than coconut flour...use for crepes, pies, pancakes and biscuits. Would have given higher rating but packaging is skeptical...does not give very much info on nutrition or source of production.

The "whole grain" version of tapioca starch
Cassava is a root crop which can be processed for the starch it in, yielding tapioca starch or tapioca pearls, or more minimally processed and ground into flour that contains more of the fiber and other non-starch components of the original root. It's analogous to the difference between wheat starch and whole wheat flour. This cassava flour is fairly fine, much like a typical stone-ground whole wheat flour. I would prefer it to be "super-fine", but it's adequate as is.It's probably best mixed with other flours for gluten free baking, as it has a noticeable, although not unpleasant, flavor in baked goods.

I'm not sure if the company changed the formula or what but this was a huge disappointment. I bought this based off of all the reviews from people who are Gluten Free and were happy with the product. I am actually Paleo so I was looking for an alternative to the nut flours and tapioca/arrowroot statches. This wasn't quite as lightweight as tapicoa startch but cooked exactly like tapioca starch. The final product came out gummy and no matter how long I cooked it the texture did not change just as with tapioca starch. I even used a recipe specifically for cassava flour but ended up throwing out the rest of the batter after trying to cook about 12 pancakes.

FLOUR consistency!
I have been gluten free for 2+ years and in trips to Costa Rica, they have beautifully textured yucca FLOUR, not the STARCH they make tons of in the states (which is bleached and fine like dust). This has the perfect texture and grind for crepes and is a coarser grind, less dust than tapioca starch. Works wonderfully, cooks well and easy to work with. SO glad I found this yucca flour. FLOUR and STARCH are not the same consistency or grind! I struggle working with starch but this was easy to use. Very good quality.

This is exactly what I ordered.
I recieved my order on time and it was exactly what I wanted. The product was described accurately.I haven't cooked with it yet but I'm sure it will be great.
